High fiber foods9/21/2023 ![]() ![]() This is based on a positive association between carbohydrate malabsorption and the fiber content of the food. It is suggested that the dietary fiber content of foods tends to determine the amount of available carbohydrate that may be available as fermentable substrate for the gut microbiota. Other studies have also shown that available carbohydrate of many starchy foods are incompletely digested and absorbed in the small bowel. The authors found that consumption of foods in which the whole grain structure was preserved resulted in greater carbohydrate losses (e.g., lentils and other legumes, β-glucan-containing cereals-oat bran and barley, and pumpernickel bread). Carbohydrate losses were assessed with different types of foods that vary in fiber and available carbohydrate in ileostomates. In addition to dietary fiber, some of the “available carbohydrate” (i.e., “available” for small intestinal digestion and absorption) in many foods may also escape digestion and contribute to the supply of fermentable substrate. High fiber diets provide an abundant supply of fermentable substrate for the gut microbiota that, through direct and indirect effects, can modulate the systemic health of its host.
